Calling all vegans and vegetarians!! This dish is for you! Having been a vegan for a few months, I struggled finding foods that I could eat for some time, and this recipe--Kung Pao Tofu--was and still is a recipe I still enjoy making. Made with loads of veggies, peanuts, and sauces, this spinoff of Kung Pao Chicken is the perfect combination of sweet, spicy, and salt! Recommendation: Serve with warm Jasmine rice. Recipe yields approximately 5-6 servings.
